Determination of vitamin C content

Vitamin C has the molecular formula C6H8O6. It is also known as ascorbic acid and has the properties of both an acid and a reducing agent as it can be easily oxidized. It is water-soluble as it contains four polar −OH groups and so is able to readily form hydrogen bonds with water molecules. A lack of vitamin C in the diet causes scurvy.
